Hot Carrot's
Ingredients:
Baby Carrots - I like them with the stems left on
2 Tbsp olive oil
1 tsp red pepper flakes
1/2 tsp chipotle chili powder
1/2 Cup chicken stock (optional)
Instructions:
1. Using a saucepan heat the olive oil over medium heat. Add the carrots, red pepper flakes, and chipotle chili powder.
2. When the carrots start to blacken, add the chicken stock and reduce until cooked through. If you don't want to use chicken stock, just cook the carrots over a lower heat. And add the red pepper flakes and chipotle chili powder half way through, you don't want them to burn up to fast.
